Dinner when it gets late
Long working days and getting home late: quick ideas for a dinner that won't sit heavily in your stomach.
The typical scenario
You get home at 8 pm, tired and hungry. Start cooking now? Often something quick ends up on your plate that doesn't really fill you up.
Prepared is half cooked
- Deliberately plan in leftovers from the day before
- Frozen vegetables and eggs as an emergency reserve
- A portion of meal prep for exactly these evenings
Three quick ideas (under 15 minutes)
- Omelette with frozen vegetables and a little cheese
- Tinned lentils with tomatoes, spices and yoghurt
- Microwave jacket potato with cottage cheese and salad
Light rather than heavy
Late in the evening, lighter meals tend to do you good: protein and vegetables with a small side. That sits less heavily in your stomach and is less likely to disturb your sleep.
My tip
Put an emergency list of three dishes on your fridge door. When it gets late, you won't have to think about it.
