Why vegetables matter so much
Vegetables provide vitamins, minerals and fibre, and they make meals bigger without making them heavy. The Swiss recommendation is five portions of vegetables and fruit a day.
Five simple ways
- Double up: in any dish that already contains vegetables, double the amount.
- Use frozen vegetables: straight into the pan, soup or sauce.
- Add them raw: cucumber, carrots or peppers on the side, no cooking needed.
- One soup a week: a big pot, several portions.
- Tray instead of pan: roasted vegetables need hardly any attention.
The plate principle
A simple rule of thumb: half your plate vegetables, a quarter protein, a quarter sides. It won't be perfect at every meal, but it's a helpful guide.
